「循環生産」と「地産地消」をテーマに、「相州牛・相州和牛」をはじめとした「循環型農業」で大切に生産される「相州米」「相州野菜」などの食材を一堂に会し、それらを “Harmonize(調和)” させたサスティナブルな美食を追求してまいります。

With "Circular Production" and "Local Consumption" as our themes, we gather ingredients such as "Soshugyu & Soshuwagyu," along with "Soshu Rice" and "Soshu Vegetables," which are carefully produced through "circular agriculture." We strive to pursue sustainable gastronomy by harmonizing these elements.

「備長炭火焼肉 和牛屋」は小田原で代々続く創業70年の老舗和牛卸問屋「中川食肉」直営だからこそ実現できる品質と希少なブランド牛「相州牛・相州和牛」をはじめとした厳選された神奈川県産の銘柄牛をご提供いたします。
創業以来、安心安全な食肉を提供することに尽力しながら、地域と共に発展してまいりました。老舗和牛卸問屋「中川食肉」をはじめ、「相州牛推進協議会」に加盟する食肉のプロたち(生産者・卸売・小売)によって、美味しさはもちろん安全・良質・新鮮な食肉へのこだわり、食の喜びや感動を皆様にお伝えすることを信条に日々、取り組んでおります。
食肉のプロや食材の生産者と顔を合わせながら、共に向上しりパートナーシップのもと、ご提供する食材ひとつひとつに誇りを持っております。
こうした私たちの「循環生産」「地産地消」への取り組みや想いをお届けするフラッグシップになれたらと願っております。

Grilled Wagyu Restaurant "Wagyu-ya" is directly operated by "Nakagawa Meat," a traditional Wagyu wholesaler in Odawara with a history of 70 years. This allows us to offer selected brand beef from Kanagawa Prefecture, including the rare and high-quality "Soshugyu & Soshuwagyu." Since our founding, we have been dedicated to providing safe and secure meat while developing together with the local community. Starting with the well-established Wagyu wholesaler "Nakagawa Meat," and including members of the "Sagami Beef Promotion Council," professionals in the meat industry (producers, wholesalers, retailers) are committed to delivering not only deliciousness but also safety, quality, and freshness. We strive daily to convey the joy and excitement of food, taking pride in each ingredient we offer under our partnerships with meat professionals and producers. We hope to become a flagship in delivering our efforts and commitment to "Circular Production" and "Local Consumption."

ご提供する日本酒は地元神奈川の酒造によるプレミアムな地酒を厳選しています。
様々なパートナーシップのもとご提供する地酒「雨降 – AFURI(吉川醸造)」と「セトイチ(瀬戸酒造)」は、酒造りの過程で出る副産物である「酒粕」をブランド牛「相州牛・相州和牛」の飼料として調合し、肥育に活用しています。
また、「相州牛・相州和牛」の「堆肥」は原料となる「酒米(山田錦等)」の生育に活用することで「循環型農業」と「地産地消」を実現しています。

私たちがご提供するこだわりの「相州牛・相州和牛」「相州米」「相州野菜」と併せてサステイナブルなペアリングもぜひお楽しみください。

The Japanese sake we offer is a selection of premium local sake made by breweries in Kanagawa. The local sake "AFURI (Yoshikawa Brewery)" and "Setoichi (Seto Brewery)," provided under various partnerships, utilize the by-product "sake lees" from the sake brewing process as feed for the branded "Soshugyu & Soshuwagyu," which is then used in their fattening. Furthermore, the "compost" from "Soshugyu & Soshuwagyu" is used to grow the "sake rice (such as Yamada Nishiki)," thus realizing "circular agriculture" and "local consumption." Please enjoy our sustainable pairings with our specialty "Soshugyu & Soshuwagyu," "Soshu Rice," and "Soshu Vegetables."
